Peppermint Black Bean Brownie

If you have been to my essential oils classes than you know exactly what I mean when I say these are the best healthy brownie I have ever tasted! Using wholesome ingredients with a pop of pure peppermint essential oil in the mix...life doesn't get much better or less guilt free. They are creamy,packed with protein and the black beans have a very subtle flavour...Plus they can be completely made in a blender.SIMPLE!

Ingredients
1 can black beans, drained and rinsed
2 large eggs
¼ cup cocoa powder
⅔ cup honey
⅓ cup coconut oil
½ teaspoon baking powder
Pinch of salt
2–4 drops Peppermint oil
1/4 cup choc chip pieces
Method
Preheat oven to 180°.Place all ingredients, except for chocolate chips, in blender or food processor and blend until smooth.Pour into greased 8x8-inch pan and top with ¼ cup chocolate chips.Bake 20–25minutes or until toothpick comes out clean.
Leave the brownie to compelety cool in the pan before taking out and cutting.
